Awesome blog with great recipes. I'm not a veggie but my husband loves chayote, I'm constantly looking for recipes with chayote. I make mine using vangibath powder , coconut and jaggery. The thing I hate about prepping them is the icky scaly hands afterwords. My moms trick is to create a barrier by just rubbing a couple of drops of oil before you peel them ( reapply as needed)

Thanks! What a good trick - I'll have to give that a try next time. My other favorite way to make this is to make a kootu like this one that I made with green tomatoes www.hungrydesi.com/2009/07/26/loca-ware-green-tomato-lentil-stew. Tastes so good with dahi bhath!
